Strawberry & White Chocolate Truffles Recipe

If you love strawberries and chocolate, you’re in for a treat! These strawberry truffles are rich, creamy, and bursting with real fruit flavour. Made with freeze-dried strawberries from New Forest Fruits, one of the UK’s leading strawberry growers, these truffles capture the essence of fresh, ripe strawberries in a silky-smooth white chocolate shell. Perfect for special occasions, edible gifts, or just as a little indulgence with your afternoon coffee.
Why Use Freeze-Dried Strawberries?
Fresh strawberries are delicious, but they contain a lot of moisture, which makes them tricky to use in chocolate-based recipes. Freeze-dried strawberries, on the other hand, deliver an intense, natural flavour without the excess water.
New Forest Fruit produces some of the most flavourful strawberries in the UK, thanks to their unique microclimate near the Solent and New Forest National Park. Their sustainable farming methods ensure the berries are packed with flavour while minimising environmental impact.
Ingredients:
200g white chocolate (plus extra for coating)
50ml double cream
2 x 10g bags of freeze-dried strawberries from New Forest Fruits
50g melted butter
1 tsp vanilla extract
Bee pollen for coating (optional)
Method:
Melt the chocolate & cream – In a heatproof bowl, gently melt the white chocolate with double cream over a bain-marie (or very gently over low heat directly in the pot). Stir until smooth.
Infuse with strawberry flavour – Crush the straberries in the bag. Stir in the freeze-dried strawberries. Add vanilla extract for extra depth of flavour. Add the melted butter and stir until smooth and glossy.
Chill the mixture – Transfer to the fridge and allow to set for 1-2 hours or until firm enough to roll.
Shape the truffles – Using a teaspoon, scoop small portions and roll into balls with your hands.
Coat – Roll the truffles in freeze-dried strawberry dust or crushed strawberries, and bee pollen, for a beautiful finish. Let them set in the fridge for half an hour before enjoying!

Pairing wine with strawberry truffles is a delightful experience - I love serving truffles as a snack when hosting my friends for drinks! The creamy white chocolate and zesty strawberry flavours work beautifully with a variety of wines:
Rosé Sparkling English Wine – The light, crisp bubbles and red berry notes of a sparkling Rosé enhance the fruity elements of the truffles while cutting through the richness of the white chocolate.
Moscato d'Asti – If you prefer a sweeter pairing, this lightly sparkling Italian wine is floral, fruity, and low in alcohol, making it a fantastic match for the strawberry’s natural sweetness.
Pinot Noir – A light-bodied, fruit-forward Pinot Noir (particularly from Burgundy) brings out the berry notes in the truffles while complementing the creaminess of the white chocolate.
